New name, same ole stuff. Only this time, it's a little worse. In this article posted by Jenny Thompson in the April 2nd addition of HSI e-Alert, Interesterified, is coming to a label near you. Interesterified is the name they've given the replacement for partially hydrogenated oils that produce trans-fatty acids.
In a study published in Nutrition & Metabolism about a year ago, researchers fed diets containing different fats to volunteers and found both trans-fat and interesterified fat adversely altered blood glucose and metabolism of cholesterol (increasing HDL/LDL ratio). In fact, interesterified fat raised glucose 20 percent in one month.
Food manufacturers have just put the same old pig in a brand new dress and somehow managed to make it WORSE than before.
